About the Dish
Along the Croatian coast, simplicity is everything. Fresh fish is traditionally grilled whole and finished with olive oil, garlic, and herbs - letting the ingredients speak for themselves.
This is one of those dishes: effortless, authentic, and best enjoyed barefoot on deck.
Ingredients (for 4 guests)
12–16 fresh sardines (cleaned)
3 tbsp olive oil
2 cloves garlic (finely chopped)
Fresh parsley (chopped)
1 lemon (cut in wedges)
Sea salt
Method
Pat sardines dry and lightly salt them.
Grill over medium-high heat for 3–4 minutes per side.
Mix olive oil, garlic, and parsley.
Drizzle over the fish just before serving.
Finish with a squeeze of fresh lemon.
