Sardines

About the Dish

Along the Croatian coast, simplicity is everything. Fresh fish is traditionally grilled whole and finished with olive oil, garlic, and herbs - letting the ingredients speak for themselves.

This is one of those dishes: effortless, authentic, and best enjoyed barefoot on deck.

Ingredients (for 4 guests)

  • 12–16 fresh sardines (cleaned)

  • 3 tbsp olive oil

  • 2 cloves garlic (finely chopped)

  • Fresh parsley (chopped)

  • 1 lemon (cut in wedges)

  • Sea salt


Method

  1. Pat sardines dry and lightly salt them.

  2. Grill over medium-high heat for 3–4 minutes per side.

  3. Mix olive oil, garlic, and parsley.

  4. Drizzle over the fish just before serving.

  5. Finish with a squeeze of fresh lemon.

    On Board Tip

No grill? No problem. A hot pan works just as well. Keep it quick - this dish is all about freshness, not perfection.
