Stuffed Tomatoes
& Bell Peppers

(4 servings)

A delicious, healthy, and aromatic Greek Mediterranean dish with olive oil and fresh vegetables!

All you need is:

• 5 tomatoes (ripe and firm)
• 5 peppers
•1 potato
• 2 medium dry onions
• 10 tablespoons of bulgur
• 1/2 bunch parsley
• 1/2 tsp. mint
• 1 tablespoon sugar
•1/2 cup olive oil
• Salt & Pepper

Instructions:

• Remove the lids from the tomatoes and peppers.
• Cut the cap-slice off the pepper and remove the seeds and membranes.
• Remove cap - slice from the tomato too and with a spoon, pour the crumbs into a bowl, if they have stems leave them on for more flavour.
• The filling
• Leave the tomato juices and seeds and put only the crumbs in the blender.
• Add the onion and grind them.
• Put them in a bowl.
• Add the bulgur (10 tablespoons as much as your vegetables).
• Add salt and pepper and half of the olive oil.
• Finally, add the chopped herbs, parsley and mint and mix well.
• In the baking pan
• Fill the vegetables 3/4 full.
• Cover with their lid.
• Sprinkle with sugar and drizzle with the remaining olive oil.
• Cut the potato into small pieces and place them between the vegetables.
• Baking - Time
• Bake for 1 hour and 10 minutes at 180ºC, on resistance, on the last rack.
