Ingredients
• 20g gelatin sheets
• 200g granulated sugar
• 250g water
• 750g sparkling white wine
• Zest of 1 lime
• Juice of ½ lime
For Serving:
• 50g blackberries
• 50g blueberries
• 50g strawberries
• 50g raspberries
• Fresh basil leaves

Instructions:
1. In a bowl, place the gelatin sheets with half of the water. Let them soak for 3-4 minutes.
2. In a saucepan, combine the remaining water and sugar. Heat over medium heat and bring to a boil until the sugar dissolves.
3. Add the soaked gelatin sheets along with the water and stir until they completely dissolve.
4. Add the wine, lime zest, and lime juice, and whisk to combine.
5. Transfer the mixture to a bowl and refrigerate for 5 hours to cool and set. It should firm up but not be completely solid.
For Serving:
1. Spoon 3 tbsp of the jelly into a glass, add the fruits, and top with more jelly and fruits until the glass is filled.
2. Repeat the process for the remaining 3 glasses.
3. Garnish with fresh basil leaves.
