Shrimp Saganaki

or "Garides Saganaki" in Greek
(4 servings)

Tender, hearty and flavorful, this recipe is one of my favorites! Garlic and a splash of tomatoes add to the fresh taste and heart-healthy benefits of shrimp.

All you need is:

• Shrimps
• 3 tablespoons olive oil
• 2 spring onions, finely chopped
• 1 small dried onion, finely chopped
• 1/4 cup ouzo
• 2 cups chopped tomatoes pomodorias fresh or commercial
• 1 pinch/s of sugar
• 100 g feta cheese in pieces
• 1 garlic clove
• 2 tablespoons chopped parsley
• Salt
• Freshly ground pepper

Instructions

• First clean the body of the shrimps (keeping the heads on the body).
• Remove the intestine.
• The salsa
• Heat the olive oil in a pan.
• Add salt and pepper and the garlic clove to the shrimps and brown them in the olive oil for 1 minute on each side.
• Add the dried onion and spring onion.
• Let them sauté for 3-4 minutes.
• Add the ouzo.
• Remove the prawns to a plate to prevent them from overcrowding, cover and set aside.
• Add the tomato and sugar.
• Bring to a boil, about, 6-7 minutes over high heat until it becomes mushy.
• Add the shrimp back into the sauce and check the salt and pepper.
• Boil for 1-2 minutes.
• Add the feta cheese in chunks to melt with the heat of the pan.
• Turn off the heat.
• To serve
• Sprinkle with the parsley.
